Day 17 - temptations temptations temptations!

Today was tough!!  My mother decided to torture me by making pizza!!  Not only is that my favourite food, but it just smelled so amazing cooking in the oven... but, don't worry,  I did not falter,  I made my own appetizing meal of BBQ chicken, grilled veggies and salad.  It was very good.  I love love love zucchini grilled on the BBQ, I am making it my new favourite food:)  Using Wii Fit has made me have to weigh myself daily... I am still losing weight, but it is funny how much your weight can fluctuate on a daily basis.  At the start of the day I can way up to 2 pounds less then I do that very same day... pretty amazing.  In conclusion, I am continuing to feel good, things are getting easier and life is much better!! :) On to day 18...
Oh, here is a pic of my meal tonight:

Day 14 - FIRST weigh in.

Its the first weigh in and I am happy to report that I am 12.5lbs smaller!  The doctor informed me that most of the weight loss was fat and some was water.  My ketones (a hormone that they use to measure how much fat you are burning) is high - that's a good thing.  I asked the doctor to check my blood pressure, it is normal rather than high!  All things considered, the first two weeks were a success!  I am continuing with the same phase as I don't find it difficult and enjoy the results I am achieving.  I have another weigh in another   2  weeks (June 10) and I am striving for a similar result!  The best part about this whole change in lifestyle is how awesome I feel!  It can only get better from here... salute to another 2 weeks!!
Oh, here is a meal that I made recently, broiled salmon, steamed green beans and broccoli... it was delicious.

Day Thirteen - May 25

Okay, I just had to share my dinner picture tonight.  It was simply delightful and I made it all myself!! I am finding that my cooking is steadily improving as the days fly by (another bonus)!
So, for dinner I made chicken burgers with roasted zucchini and asparagus.  Honestly, I think it was the best meal I made thus far.
How can you make a chicken burger as healthy as possible?  Well, put it on romaine lettuce leaves instead of a bun and switch the french fries to roasted veggies - voila, you have yourself a delicious meal skipping on many carbs and calories!!  If anyone wants a recipe from any of the posts  I have made, please feel free to email me!!  Oh, and Wii fit is pretty amazing also... I have been keeping myself on track with that program and am enjoying my physical activity much more so than hitting the gym (boring).  I would much rather play video games and enjoy my workout then slave at the gym!! :)

Day 14 is fast approaching and I am proud to say that I haven't strayed and I'm excited to see the results of all this dedication and hard work on Friday!

Day 12 - Tuesday May 24th - 2011

Almost time for my first weigh in.  I am super excited to see the results... I hope that the doctor will be able to give me good  news (fingers crossed).  This weekend was pretty tough food wise.  I attended a wedding on Saturday where all the food looked and smelled AMAZING... I however, only ate what I thought would be okay, grilled fish, salad, chicken breast and 4 shrimp.  Oh, but all those desserts, looked sooooo delicious, but I stayed tough and didn't falter - this is way to important to me to throw off my results on Friday!  Yesterday...another hard day!  It was my birthday (the big 30), and I wanted wings!  I took myself to the fruit market and bought fresh chicken wings!! I marinated them with garlic, spices, low sodium soy sauce, a dash of Dijon mustard, slapped them on the BBQ and ate my hearts content~!  They were gloriously delicious...  I ate every last one of them.  With my wings, I made grilled green pepper and zucchini (yum) and coleslaw (shredded cabbage with lemon and olive oil dressing).  Here is a pic:
For the most part, I am feeling good, life is looking up and I cannot wait to see myself on my 31st birthday!!! Day 13, Ill see ya tomorrow.

Day Nine - Everything is Fine!!

Today the plan is to head to the Dr. Poon clinic to learn about how to read nutrition labels...I am looking forward to this because I find that I am scrutinizing every thing that I put in my mouth these days and having a better foundation will only work to my benefit.  Yesterday I went out to Milestones (a restaurant).  I asked the waiter for the nutritional menu, which he brought to me,  From that, I was able to choose some salmon.  I of course asked for it to be make with no added seasonings... just the fish.  Waiter assured me this would be done.  40 mins later when we get the food, surprise- it had been made with garlic butter :(  The manager who was so helpful, came and ensured me that I would be receiving a new fresh piece just as I had asked for it.  20 mins later, I  got the fish just as I wanted,  When it came time for the bill, the waiter said "there is no bill"!!  So, my friend and I went home full bellied only shelling out $20.00 as a tip!  Aside from that, the fish was actually really good.  I only squeezed lemon on it and pepper.  It came with asparagus, but I wasn't convinced that the asparagus hadn't been made with the same garlic butter, so I only ate a few sprouts of it.  All in all, a good dining out experience!!  So it is possible to eat out, just make sure to see the nutritional info and ensure that they cook it to your specifications.

Day Six - May 18th

"Feels good" was my facebook status this morning... lol.  I don't think that I have ever felt good in the morning, just one of the welcomed changes since starting this journey!  It has been 6 days now since I have had anything "dense" (carb rich) to eat.... and I'm not really missing it!!! It has gotten much easier than those first couple of days.  Also, I am enjoying figuring out the different recipes that I can come up with that are both tasty and can be included during this first phase.
I was tempted and stepped on the scale this morning... I was pleasantly surprised!! But I don't want to reveal any numbers until I have my next visit with the Dr. on May 27th... :)
Here is a couple of dinners that I have made over the last couple of days.
May 17th Dinner: Pork Chops
with asparagus and salad. (delicious)!!

May 18th: Tossed Salad with broiled chicken

Day Four - May 16th - 2011

So it is getting easier as the days go by...   The hunger pains are subsiding and my body feels like it has more energy (BONUS!!)  Yesterday I went out to eat at Red Lobster and I was able to find a meal that I was able to eat considering all the restrictions.  I had fresh salmon, broiled with nothing on it.  Accompanied by steamed broccoli (also with nothing on it) as well as plain salad with dressing smuggled in by me in  my purse!  (I have no shame).  It was extremely delicious and I could only eat half of it! :

Today, my mother helped me prepare a fantastic soup I like to call "Vegetable Soup Puree".  In this soup you will find:  Chicken Broth (from boiled chicken breast), chicken breast, spinach, kale, cauliflower and garlic.  Pepper was added for taste.
I am ready for day 5!  Bring it on!

Day Two - May 14th 2011

Day two also pretty difficult.  Not surprising though... However I managed to make a really awesome dinner (and lunch for tomorrow).  I made turkey meatballs and had them with tofu noodles.   I must say considering there is really no salt, carbs or sugar in the meal it was delicious!   Also, today I felt really lethargic.  I'm sure it has to do with the fact that my body is probably craving sugar and carbs which it is used to having all the time! So, I hope that this feeling and the hunger pains subside soon!  All things considered, I am still motivated to continue on!!!
I have attached a picture of my dinner meal... It looks better than it tasted!

Day One Life Change - May 13, 2011.

Well I can now say that the first day of the Dr. Poon Diet (I prefer to call it a life change) has been rather difficult.  I felt hungry through out the day trying to eat as often as possible.  The hardest part about this is definately the breakfast.  I was a bagel, cheese, tomato eating kinda girl... this morning I ate egg whites, green pepper and green onion wrapped in a romaine lettuce leaf!!!  Through out the day I ate celery, salad, a Dr. Poon approved smores bar (surprisingly delicious),  chicken, broccoli, and mashed cauliflower (yum, btw).  I also made sure to drink lots of fluids (diet coke, water and coffee) through out the day.   At the end of the day, I feel exausted and thought about food a lot.... I know this will be temporary but until I become an expert at preparing phase one meals, it will definately be a struggle.
All in all I am extreemly excited and motivited to continue on this journey.  I am chronicling my journey here for my own reflection as well as a reference for others that are overweight and are ready to begin a journey of change as well!

Day two here I come...
